This flavorful green chutney has a close connection with tandoori delicacies.Tandoori dish, tikkas,kababs are incomplete without this creamy dip.This tempting dip is made of mint leaves, coriander leaves and thick curd ad some green chillies.The thick curd gives this disg a creamy and silky texture.So without  waitung any longer let's get started...

Cooking Time:10 minutes

Ingredients

  • Coriander leavs     1cup
  • Mint leaves           1/3 cup 
  • Hung curds            as req.
  • Green chili            3
  • Red chili powder   as req.
  • salt
  • sugar

Method

  1. first, clean the leaves and chilies and put them in grinder jar.
  2. Now add red chili powder,salt, pinch of sugar and grind these ingredients into a fine paste. 
  3. Whisk the hung curd in a large bowl.
  4. Now add the green paste to the curd.
  5. Give it a good mix and your very simple Dahi green chutney is ready to serve.

    Easy garam masala recipe

    Garam masala is very special ingredient  for  Indian cuisine. this masala give a special touch to the Indian food.garam masala  is better when made with whole spices that have been roasted ground, so lets start

    Ingredients

    •  cumin seeds(jeera)
    •  coriander seeds(dhania)
    •  cardamom(elaichi)
    • black pappercorns(kalimirch)
    • cinnamon stick(dalchini)
    • cloves(laung)
    • nutmeg(jaiphal)
    • fennel(saunf)
    • bay leaves(tejpatta)

    Method


    1. set the pan on heat ( medium)
    2. place all the whole spice 
    3. dry roast them( 2 to 5 minutes)
    4. transfer the roasted spices intospice grinder
    5. place the mixture in an airtight container and store in a cool dry place.
    6. And thats it your garam masala is ready.

      Aloo Tikki

      Aloo tikki is very popolar snack across India made using mashed potatoes /aloo. There is  two type of tikki is made, One is stuffed with chana dal and the other is simple patty. Today i will share  the simple one which can be done very quickl if boiled potatoes are available. This  crispy aloo tikki doesn't absorb much oil and taste delicious. You can enjoy  hot crispy aloo tikki with pudina chutney/ mint chutney or hot tea or coffee.so let's get started..

      Cooking Time 25 to 30 minutes


      Ingredients



      • potatoes 4 medium
      • Ginger paste 1tsp
      • Garam masala 1/2 tsp
      • Red chili powder 1 tsp
      • Mint leaves (chopped)
      • coriander leaves(chopped)
      • Green chili chopped 1tsp
      • Rice flour 2tbsp
      • Bread crumbs 3 to 4 tbsp
      •  Salt as req.
      • Oil as req.
      Method

      1. First  boiled the potatoes thoroughly, once they are cooked drain them completely. now peel the potatoes and grate them, then mash them.
      2. Let the  potatoes cool down properly, then add the spice powders(garam masala,red chili powder)and ginger paste, chopped mint, coriander leaves, chopped green chili,rice flour, bread, salt and mix it well, make a dough.
      3. Now, divide the dough into small shaped tikkis, then simply coat the tikkis in the bread crumbs.
      4. Take a frying pan ,put some oil, heat the oil till its medium hot ,now gently place the tikkis and fry them.
      5. When one side of tikki becomes  golden brown and crispy, turn over and fry the other side.
      6. Then drain the tikkis on paper towels to remove the excess oil.
      7. Now your simple , easy nd super tasty snack is ready to serve. you can serve it with green chutney or tomato sauce.

        Momos chutney, a spicy red saoce made with tomatoes, dry red chili garlic. It's must dipping saucefor veg momos.It is a very tasty yet very is to cook recipe, so let's start


        Cooking time:15mins


        Ingredients



        • Dry red chilli (soaked in  hot water)
        • Tomatoes 1 big chopped
        • Garlic
        • Ginger
        • onion chopped
        • soy sauce
        • vinegar
        • sugar
        • salt
        • oil
        Method


        1. Grind tomatoes,dry red chilli ina grinder.
        2. heat oil in frying pan and add  chopped garlic,chopped ginger  sautethem for 30 sec.
        3. then add  chopped onion, soy sauce, vinegar, salt, sugar and fry them
        4. Now add the paste of tomato-redchilli paste in to it and mix them very well.
        5. cook it for 8 to 10 minutes  .
        6. transfer to  a dipping bowl  and serve momo chutney with veg momos.

          Aloo pakora/batata bhaji or potato fritters

          Aloo pakora/batata bhaji is simple and easy yet very tasty as i call them my favorite snack.I made the aloo pakoras for evening snacks with tea.  Here i am showing a detail method as i personally know many people,  who are new to cooking. i hope this recipe helps you to make yummy crispy pakoras.  so jump to the recipe

          Ingredients



          • 1 large aloo(potato)
          • 1cup of besan(gram flour)
          • 1 to 2 tbsp(tablespoon)rice flour
          • chopped coriander leaves
          • 1 pinch of red chili powder
          • chopped green chiles
          • chopped garlic
          • 1 teaspoon ginger paste
          • 1 teaspoon of chaat masala
          • water
          • 1 pinch of baking soda
          • salt to taste
          • oil(sunflower/rice bran)
          Method

           First mix all the dry ingredients(besan/gram flour,rice flour,red chili powder,salt, baking soda) then add choped coriander leaves and chopped green chiles,garlic ginger with water.

          Peel the aloo and slice it thinly. Give oil to the pan or kadai for frying then dip  each slice in the batter and place it genty in pan. Fry the aloo pakoras until  they become gloden and crispy then drain the pakoras on paper towel to remove the excess oil. serve the yummy pakoras hot sprinked with some chaat masala powder or tomato sauce.

                                Vegetable momo
            Vegetable momois a vegetarian Tibetan dish famous as a street  snack. Momos are a type of dumpling.Today i will share the steamed version of it ,so  ou can say it's a healthy form of snacking.so let's start.

            Cooking time:50 min

            Ingredients
            • All purpose flour/ maida 2cup
            • 2tbsp oil( for dough)
            • Water 1/2 cup
            • Cabbage1small (grated)
            • Ginger 2inch piece(grated)
            • Onion chopped
            • Carrot grated
            • salt to taste
            • Blackpepper 1 table spoon
            • soy sauce
            • chilli sauce
            Method
            1. Add maida ,oil 2tbsp,and salt ina bowl.
            2. mix them all and prepare a soft dough by adding water as needed.cover the dough and keep it aside for 30 minutes.
            3. Set a pan ,add oil to heat then add chopped onion,garlic, ginger and saute for 30 sec. add all vegetable (cabbage,carrot)and salt fry them for 2 minutes.
            4. Add soy sauce and chilli sauce and black pepper powder mix them all together.
            5. knead the dough again for a minutes and divide into 2 equal portions.give each portion a round shape  and divide them in small portions and flatten  them.
            6. place one small portion on rolling board and roll it out into thin disc.
            7.  place 1 tablespoon filling in center,lift the edge from one side and start pleating join them in centre to seal it.
            8. prepare all momos in similar way.
            9. Now grease a steamer plate with oil and place the momos.
            10.  heat 2 glass of water in  steamer over medium flame.
            11. place stand in the steamer and place momo plate over it. coverthe steamer and steam them for 6 to 7 minutes over medium heat until they look translucent .
            12.  Then remove  the lid and tranfer them to a serving plate  and serve them with momos chutney

              Vegetable Biriyani

              Vegetable Biriyani prepared in traditiona dum Biriyani style is a vegetarian's dream come true for enjoing the famous dum biriyani. Today ,im preparing it in  3 basic step,which allows food to slow-cook in its own steam and juices making it highly flavorful and aromatic. You may feel that this biriyani recipe requires so many ingredients but don't let it fool you, it take only 30 to 40 minutesso try it once,let's jump to thr recipe,

              Cooking Time: 30 to 40 minutes

              Ingredients


              • Basmati rice 3/4 cup
              • 5 to 10 Green cardamoms
              • 7 cloves
              • 2 Small piece of cinnamon
              • 2 Small bay leaves
              •  4 piece of Potato
              • 1/2 cup of chopped cauliflower
              • 1/4 cup of chopped Carrot
              • 1/4 cup of chopped Peas
              • 1 medium Onion, chopped
              • 2 slited Green chiles
              • 1 teaspoon of Ginger-Garlic paste
              • 4-5 Black pappercorns
              • 1/2teaspoon of cumin seeds
              • 1/2 teaspoon of red chilli powder
              • 1/8 teaspoon of turmeric powder
              • 1 teaspoon of cumin-coriander powder
              • 1 teaspoon of Garam masala powder
              • Biriyani masala 2 to 3 tablespoon
              • 1/2 cup of beaten Curd
              • 2 tablespoon of coriander leaves
              • cooking oil
              • salt to taste
              • 1/4 cup of fried onion
              • Rose water as req.
              • kewra wateras req.
              Method


              1. Boiled the rice with 1 stick of cinnamon,keep it aside.
              2. Now,set the pan on flame( medium heat)and put some oil and add cumin seeds ,bay leaves,cinnamon,cardamom,cloves, black pappercorns ,let them crackle.
              3. At this moment add potato, coliflower carrot ,cover them with a lid on low flame.
              4. After 1o minutes open the lid  and add chooped onion , ginger-garlic paste ,cook them propery, then add the all dry masalas(red chilli powder, turmeric powder,cumin-coriander powder, biryani masala)fry them little and add the beaten curd ,mix well and cook for a minute, keep the gravy covered untill it became thick .
              5. Now, set a kadai and put 1 layer  vegetable gravy ,1 layer of basmati rice  top of it sprickle some  fresh coriander leaves, rose water, kewra water,fried onion, briyani masala and in same process repeat the 2 layer and complete  it.
              6. then cover it with tightly fitted cover.heat the tawa over low flame, put kadai over it and cook it for 10 to 12 minutes to get the dum effect  after 15 minutes turoff flame. 
              7. Remove the lid and transfer the layered vegetable biriyani to the serving plate.
