Aloo pakora/batata bhaji is simple and easy yet very tasty as i call them my favorite snack.I made the aloo pakoras for evening snacks with tea.  Here i am showing a detail method as i personally know many people,  who are new to cooking. i hope this recipe helps you to make yummy crispy pakoras.  so jump to the recipe

Ingredients



  • 1 large aloo(potato)
  • 1cup of besan(gram flour)
  • 1 to 2 tbsp(tablespoon)rice flour
  • chopped coriander leaves
  • 1 pinch of red chili powder
  • chopped green chiles
  • chopped garlic
  • 1 teaspoon ginger paste
  • 1 teaspoon of chaat masala
  • water
  • 1 pinch of baking soda
  • salt to taste
  • oil(sunflower/rice bran)
Method

 First mix all the dry ingredients(besan/gram flour,rice flour,red chili powder,salt, baking soda) then add choped coriander leaves and chopped green chiles,garlic ginger with water.

Peel the aloo and slice it thinly. Give oil to the pan or kadai for frying then dip  each slice in the batter and place it genty in pan. Fry the aloo pakoras until  they become gloden and crispy then drain the pakoras on paper towel to remove the excess oil. serve the yummy pakoras hot sprinked with some chaat masala powder or tomato sauce.

    Vegetable momos

                                             
                      
                        Vegetable momo
    Vegetable momois a vegetarian Tibetan dish famous as a street  snack. Momos are a type of dumpling.Today i will share the steamed version of it ,so  ou can say it's a healthy form of snacking.so let's start.

    Cooking time:50 min

    Ingredients
    • All purpose flour/ maida 2cup
    • 2tbsp oil( for dough)
    • Water 1/2 cup
    • Cabbage1small (grated)
    • Ginger 2inch piece(grated)
    • Onion chopped
    • Carrot grated
    • salt to taste
    • Blackpepper 1 table spoon
    • soy sauce
    • chilli sauce
    Method
    1. Add maida ,oil 2tbsp,and salt ina bowl.
    2. mix them all and prepare a soft dough by adding water as needed.cover the dough and keep it aside for 30 minutes.
    3. Set a pan ,add oil to heat then add chopped onion,garlic, ginger and saute for 30 sec. add all vegetable (cabbage,carrot)and salt fry them for 2 minutes.
    4. Add soy sauce and chilli sauce and black pepper powder mix them all together.
    5. knead the dough again for a minutes and divide into 2 equal portions.give each portion a round shape  and divide them in small portions and flatten  them.
    6. place one small portion on rolling board and roll it out into thin disc.
    7.  place 1 tablespoon filling in center,lift the edge from one side and start pleating join them in centre to seal it.
    8. prepare all momos in similar way.
    9. Now grease a steamer plate with oil and place the momos.
    10.  heat 2 glass of water in  steamer over medium flame.
    11. place stand in the steamer and place momo plate over it. coverthe steamer and steam them for 6 to 7 minutes over medium heat until they look translucent .
    12.  Then remove  the lid and tranfer them to a serving plate  and serve them with momos chutney

      Vegetable Biriyani

      Vegetable Biriyani prepared in traditiona dum Biriyani style is a vegetarian's dream come true for enjoing the famous dum biriyani. Today ,im preparing it in  3 basic step,which allows food to slow-cook in its own steam and juices making it highly flavorful and aromatic. You may feel that this biriyani recipe requires so many ingredients but don't let it fool you, it take only 30 to 40 minutesso try it once,let's jump to thr recipe,

      Cooking Time: 30 to 40 minutes

      Ingredients


      • Basmati rice 3/4 cup
      • 5 to 10 Green cardamoms
      • 7 cloves
      • 2 Small piece of cinnamon
      • 2 Small bay leaves
      •  4 piece of Potato
      • 1/2 cup of chopped cauliflower
      • 1/4 cup of chopped Carrot
      • 1/4 cup of chopped Peas
      • 1 medium Onion, chopped
      • 2 slited Green chiles
      • 1 teaspoon of Ginger-Garlic paste
      • 4-5 Black pappercorns
      • 1/2teaspoon of cumin seeds
      • 1/2 teaspoon of red chilli powder
      • 1/8 teaspoon of turmeric powder
      • 1 teaspoon of cumin-coriander powder
      • 1 teaspoon of Garam masala powder
      • Biriyani masala 2 to 3 tablespoon
      • 1/2 cup of beaten Curd
      • 2 tablespoon of coriander leaves
      • cooking oil
      • salt to taste
      • 1/4 cup of fried onion
      • Rose water as req.
      • kewra wateras req.
      Method


      1. Boiled the rice with 1 stick of cinnamon,keep it aside.
      2. Now,set the pan on flame( medium heat)and put some oil and add cumin seeds ,bay leaves,cinnamon,cardamom,cloves, black pappercorns ,let them crackle.
      3. At this moment add potato, coliflower carrot ,cover them with a lid on low flame.
      4. After 1o minutes open the lid  and add chooped onion , ginger-garlic paste ,cook them propery, then add the all dry masalas(red chilli powder, turmeric powder,cumin-coriander powder, biryani masala)fry them little and add the beaten curd ,mix well and cook for a minute, keep the gravy covered untill it became thick .
      5. Now, set a kadai and put 1 layer  vegetable gravy ,1 layer of basmati rice  top of it sprickle some  fresh coriander leaves, rose water, kewra water,fried onion, briyani masala and in same process repeat the 2 layer and complete  it.
      6. then cover it with tightly fitted cover.heat the tawa over low flame, put kadai over it and cook it for 10 to 12 minutes to get the dum effect  after 15 minutes turoff flame. 
      7. Remove the lid and transfer the layered vegetable biriyani to the serving plate.

        Honey Butter Fried Chicken

        Honey Butter Fried Chicken is a perfect combination of crunchy and sweet honey butter flavor. It has small pieces of crunchy sweet chicken with garlic honey and butter flavor. It tastes delicious. perfect starter for party The recipe is followed:

        Cooking time: 30 minutes


        Ingredients

        • chicken chunks 1kg
        • 1 teaspoon salt
        • 1/2 table spoon of blackpepper powder
        • 2 eggs
        • 1/4 cup of corn starch
        • 1/4 cup of maida(all purpose flour)
        • 1/2 teaspoon of baking powder
        • cooking oil as req.
        • 4 to 5 tablespoon of butter
        • garlic- ginger chopped
        • 1/4 cup sugar
        • 2 teaspoon soy sauce
        • 2 teaspoon of honey
        Method


        1. Put chicken in bowl and add black pepper powder, salt then crack 2 eggs, add corn starch, flour, baking powder into the bowl and mix them well.
        2. Set a pan, heat oil for frying. Like my korean fried chicken recipe, here also we will double fry the chicken. so put all the chicken in to the oil for frying (first time) and let cook them for 5 mins until the bottoms of chicken turn little crunchy then flip them and let it cook for another 5 mintues.
        3. Keep frying for more 5 to 8 mins and then drain the chicken pieces from pan and let the oil heat up for 1 min. Then put all the chicken again in the oil and fry those for 7 mins. 
        4. Drain the chicken and keep those fried chicken in a separate bowl.
        5. Heat up pan for couple of minutes then add butter,chopped garlic-ginger and stir it together. Add soy sauce, sugar and honey and stir it well.
        6. Add the chicken then toss it and your honey butter fried chicken is ready to serve.

        Crunchy korean fried chicken

        Korean fried chicken(Dakgangjeong)











                
        I have tasted and made all kind of fried chicken but this korean fried chicken is my hubby's favourite.  for this recipe ,no other method i've come across has the same combination of tender, juicy,flavorful and plate-scratching crispiness and taste. It's a must try.


        Preparation time :10 minute
        Cooking time:22 minutes

        Ingredients


        • 600gm of chicken wings
        • 4 tablespoon of ginger garlic crushed
        • Salt to taste 
        • Black pepper powder 1 tablespoon
        • 6 to 7 dried red chilly( seedless)
        • Peanuts
        • Sugar
        • Soy sauce(dark)1/4 cup
        • Vinegar 1tbsp
        • Brown sugar 1tbsp
        • Mustard sauce 1tbsp
        • Corn starch 2 cups
        • Oil
        Method
        1. Stir chicken wings, 2 tbsp crushed ginger-garlic,salt ,corn starch and black pepper powder together in a bowl. gradually whisk until all chicken are coated.
        2. set a pan , heat the oil  and transfer the coated chicken  in  batches.fry the chicken wings for 10 minutes then transfer them in a clean bowl and decrease oil temperature, cook the chicken again for next 12 minutes until golden brown and crispy outside , juicy inside then transfer to a rack to drain .
        3. now set a clean pan on heat, put oil in  it. 
        4. Add 2 tbsp crushed ginger-garlic, dried red chilly(seedless),and peanuts fry them for 1 minute
        5. Add soy sauce,vinegar,mustard sauce and brown sugar and mix  them all. after 4 minute add fried chicken wings and toss them.
        6. your crispy juicy korean fried chicken is ready to serve.

        Chocolate mug cake  is an instant solution of everyone's sweet craving.I have made this recipe quite afew time and it is popular with my family and friends as well.It's a quick and easy to make recipe. I'm sure you all will enjoy this as much as I do! This my version of Mug cake, so let's jump to the recipe

        Preparetion Time:15 minute.
        Cooking time:5 minute.

        Ingredients


        • All purpose flour 3tbsp
        • Cocoa powder 2tbsp
        • Milk maid 3tbsp
        • Baking soda 1/4tsp
        • Baking powder 1pinch
        • Melted butter 2tbsp
        • Milk 5tbsp
        Method
        1. Mix flour,cocoapowder, baking soda, baking powder in a microwave-safe /any ceramic mug;  add milk, melted butter, milkmaid and blend with a fork until smooth.
        2. Now microwave for 1 minute and take a fork or toothpick and poke the top of the mug cake slightly in the middle.if it comes up with wet batter, or stickinesson it maicroave it for another 1 minute. if it comes up dry then the mug cake s ready .
        3. let the cake cool down for 2 /3 minute before eating.

        Naan on tawa (without tandoor)

        You all know naan is the most popular bread in India.traditionally, naan is cooked in tadoor but today We  will prepare naan  on tawa.  Naan is  much easy to make at home. It turnsout really soft and tasty. you can serve naan with chole, paneer or any non-veg dish also.


        Cooking time: 15 mintues
        prepareing time: 2 hours30 minutes

        Ingredeints


        • All purpose flour 2 cup
        • Oil 1tbsp
        • Baking soda1/2 tsp
        • Sugar 1tsp
        • Salt 1/2 tsp
        • Curd 1/4 cup
        • water
        • Butter
        Method


        1. Take maida, in a mixing bowl.add sugar salt,baking soda,curd and oil mix them well then add warm water, little by little and knead it into a very soft dough.
        2. Cover the bowl with a lid and keep it to rest for 2hrs30mins.
        3. Now open the lid and take small portion of the dough, roll them into flat shapes between yor palms.
        4. Dip it into a bowl of maida.place it on rolling base and roll it into a oval shape using rolling pin. Heat the tawa.
        5. apply water on one side of the naan  and tranfer it on tawa in such a way that the wet side is facing downwards and cook it for 1 minute.
        6. Now flip the tawa upside down such that the naan is directly in contact with fire.cook it for 1 minute until it truns light brrown .
        7. remove the tawa from heat and place the naan on seving dish Brush some butter all over the naan
        8. Your tasty and easy tawa naan is ready to eat.

        Potato Pancake/Aloo- Ka Cheela

        Potato Pancake is very tasty and filling dish for kids. This is spiced version of potato pancake. Cheela recipe is typically served for breakfast but you can make it as dinner or as your evening snack.  It is a very  easy dish which can be prepared within minutes and the best part of this recipe is tat it does not reqire muc preparation time.Still it is so tasty and healthy with all the nutrients required to start your day. so let's start.

        Cooking Time: 10 mins.

        Ingredients
        • 3 potato (grated)
        • 2 tbsp all purpose flour
        • 2 eggs
        • 1 greenchilli(chopped)
        • 1 onion(chopped)
        • 1 tbsp red chilli powder
        • 1 tsp blackpepper powder
        • salt as req.
        • 2 tbsp cooking oil
        Method
        1. soak the grated potatoes for 5 minutes in water.
        2. drain the water from and squeeze the grated potatoes in a bowl.
        3. now add flour,chopped onion,red chilli powder,blackpepper powder,chopped green chilli and eggs.
        4. give it a good mix with fork or whisker. and then add salt.
        5. set a frying pan on heat and add the oil.
        6. take a tablespoon full of of potato mixture over hot pan and spread as thin as possible.
        7. roast the pancake in low heat, after 2 minute flip over the cheela and cook side until turns golden.
        8. your  Potato Pancake is ready to eat .you can serve it with tomato sauce/ green chutni.

        Gujiya

                                                                             Gujiya
        Gujiya is a sweet dumpling made with maida(all purpose flour)and stuffed with khowa/suji/dryfruits. In this post ,i'm sharing Khowa stuffed Gujiya. It is very popular in India. you can have it in holi, diwali or just as dessert. So let's jump to the recipe:

        CookingTime: 60 minutes




        Ingredients:

        •  2 cup all purpose flour 
        • 1/4 ghee(clarified butter)  
        • 1/3 water
        • khowa
        • powdered sugar
        • cardamom powder
        • dry fruits(cashew nuts,raisins)
        • pinch of salt  
        • ghee for frying     

      1. Method:

        1. Take all purpose flour in bowl then add clarified butter,salt and mix them well.
        2. Now add water  in parts and begin to knead. 
        3. Knead the dough till firm.cover the dough with a lid and keep asidefor 30 minutes.
        4. Set a pan on heat(low flame),add the khowa and stir it until it tuns slightly brown.
        5. Then cool down the khoya and add powdered sugar,cashewnuts,raisins, cardamompowder and mix it well.
        6. Knead the dough once again and make small and equal balls.roll each boll in your palms.
        7. Dust the rolling board with flour.roll each ball with rolling ping to a small circle.
        8. Apply water all over the edge og the circle
        9. Place 1tbsp khoya flling on one side of the circle and carefully, bring the edges together and join and press gently.
        10. Heat ghee for deep frying ina kadai then test the temperature put small dough if it comes up gradually then the ghee is ready .
        11. Add the gujiyas in ghee and fry both side until they become golden .
        12. Then drain them on kitchen paper .
        13. Your khoya gujiya is ready to serve.

        Bengali people love fish. We bongs like fish in any way, such as, in curry, stew, mustard gravy, or in biriyani. So here i'm sharing this recipe, and this is my version of fish biriyani. this is basically fice basec rice variety with lots of spices. It is easy to cook and yet very much tasty.

        Cooking time: 1hrs  30 mins.                                                     



        Ingredients( for rice)
        • Soaked basmati rice1 1/2 cup
        • Cinnamon stick 1
        • Cloves 4 to 5 
        • Green cardamom 4 to 5
        • Bay leaves 2
        Ingredients(for biriyani)
        • Fish 7 to 8 pieces
        • Whipped curd 1 cup
        • Biriyani masala
        • Lemon juice 2 to 3 tbsp
        • Turmeric 1 tsp
        • Red chilli powder 1 tbsp
        • cumin powder 1tbsp
        • Green chilli slited 2 to 3
        • Fried onion 1/2 cup
        • Coriander powder 1 tbsp
        • Onion chopped 
        • Ginger-garlic paste 1 tbsp
        • Cumin seeds1 tsp
        • coriander leaves 2 tbsp(chopped)
        • Mint leaves 1 tbsp(chopped)
        • Salt to taste
        • Rose water  as req.
        • Cooking oil as req.
        Method
        1. marinate the fish with lemon juice, whipped curd, red chilli powder, coriander powder, cumin powder, turmeric powder, ginger garlic paste, salt 2 mint leaves, fried onion, biriyani masala powder and keep a side for 30 mins.
        2. now boil 4 cups of water along with bay leaves,green cardamom, cinnamon, cloves  in a large pan. when the water starts boiling add the soaked rice and cook until the rice 90 % cook. Afterthat, drain water and allow the rice to cool.
        3. now heat  the oil in another pan and add cumin seeds and chopped onion stir it for 7 to 8 mins, then add the marinated fish and mix well.
        4.  cover the fish with a lid and cook for 25 mins. 
        5. Afterthat  sprinkle slited green chilli, rose water coriander leaves, mint leaves, fried onion, ghee then add the boil rice .
        6. Again sprikle ghee, rose water, coriander leaves, mint leaves fried oinon  and cover with a lid and cook for 8 to 10 mins.
        7.   now serve your biriyani with raita.
